    The listing of the BY (Brewery Year) conveys how this special sake represents that year's unique brewing conditions, including the continually polished techniques, the weather, and the condition of rice, all focused on Ishimoto Sake Brewery's aspiration of "A blossom of aesthetics in a single drop." It is a sake that puts forward elegant ginjo aroma and balanced flavor, and the unique refinement and lingering, full aftertaste are only possible through the full use of techniques cultivated by the brewers over many years. This is a limited edition product that is sold by drawing in lots of ten bottles a month.

    Why do we brew? Why do we continue to make sake? The answer can be found in the words of our founder, Ryuzo Ishimoto.

    "We make sake for the local people of Kameda-go to enjoy."

    Sake that complements meals, and sake that matches itself to the drinker before, during, and after meals. Over time, our sake connects people and enhances experiences. Since its establishment in 1907, Ishimoto’s 2nd, 3rd, and 4th generation kuramoto have never wavered in their commitment to these ideals.

    Sake brewing is not a path with an end, no matter how much you perfect it. We pour all our years of skill and passion into every drop of sake, just as the kanbai winter plum endures the harsh cold to unveil its beauty in a single blossom. Ichirin, itteki - one drop, one blossom/flower. This is the sake that embodies our aesthetic ideals more than any other. Through each and every drop, we hope to share the vitality that propels us towards tomorrow and the scenic beauty of Koshi no Kanbai's home of Niigata. For us, there is no greater joy. And in the year ahead we will once again brew even finer sake, delivering more moments of inspiration and rich experiences. We renew our commitment to the future with Ichirin Itteki leading the way.

    In pursuit of a singular flavor.

    We take Yamadanishiki rice grown in the Shijimi district of Miki, Hyogo Prefecture and precision mill it to 30%, brew it carefully, then immediately pasteurize it after pressing. We then bottle and flash cool it, and let it mature in the bottle to seal in the rich aroma and flavor. It is a brew that pursues a singular flavor, even among Koshi no Kanbai products.

    The Ichirin Itteki label bears a gold-leaf-embossed logo based on a snowflake. Just as the kanbai winter plum blossom endures the harsh cold to unveil its beauty in a single blossom, the label expresses Ishimoto Sake Brewery's aesthetic ideal of quiet beauty with a strong core. The carton and wrapping paper bear the motif of a traditional Japanese mizuhiki, a decorative paper cord used in gift-wrapping, making this sake the perfect fit for all of life's significant milestones.

    Aroma

    It brings a luxurious, gentle ginjo aroma with a refreshing sensation; notes of yellow citrus fruits like grapefruit and yuzu, ripe ume, yellow peach, and quince, green notes hinting at pine needles, green bamboo, and buds, and floral aromas such as orange blossom, jasmine, fragrant olive, and wintersweet, all in a refined harmony. Additional mineral notes like rock spring water and a faint scent of rice syrup add to the harmony.

    Flavor

    From the initial elegant, gentle sweetness of the first impression, it opens up to an immediate clear, sharpness. It is not light; it has a firm structure with a lingering finish as befits a Yamadanishiki daiginjo. The after flavor brings a long, fresh sensation.

    Drinking Recommendations

    A drinking temperature of around 10 degrees Celsius will preserve the rich aroma and bring out the sharp elegance of the flavor. Overchilling will interfere with the firm Yamadanishiki flavor and dilute the fresh aromas.
