To celebrate 110 years since Ryuzo Ishimoto founded our brewery, we poured all the gratitude and passion of those years into the blossoming of this special Koshi no Kanbai. From the difficult technique of polishing rice with ultimate precision, to the brewing skills passed down through the decades, we used all the strengths of this historic brewery. This brew is the result of all that. This went on very limited sale in 2017. (No longer for sale)

Exceptional focus on rice.

Yamadanishiki rice has earned a nearly religious following among brewers. The nation's leading growing area is Miki in Hyogo Prefecture, which is gifted with mineral-rich clay soil. Koshi no Kanbai has been using Yamadanishiki rice from the Shijimi district of Miki since 1974. Every year, we visit the area to observe the growing rice along with the farmers. In autumn, we take freshly harvested Yamadanishiki of the highest Tokuto grade, mill it to the ultimate precision and brew it with care. Then, to ensure that the aroma and flavor are preserved, we immediately pasteurize and quick chill it after pressing, then bottle and mature at low temperatures. That is where Koshi no Kanbai Ichirin Itteki 110th Anniversary Sake stands out.

The beauty of the dignified winter plum blossom blooming in the snow.

The Ichirin Itteki label bears a foil-embossed logo based on a snowflake. Just as the kanbai winter plum blossom endures the harsh cold to unveil its beauty in a single blossom, the label expresses Ishimoto Sake Brewery's aesthetic ideal of quiet beauty with a strong core. The carton and wrapping paper bear the motif of a traditional Japanese mizuhiki, a decorative paper cord used in gift-wrapping, making this sake the perfect fit for all of life's significant milestones.
